This Popular Cut Isn’t What You Think It Is!
By Stephen Kitar
If you’ve ever wondered how to recreate a Brazilian-style steakhouse dinner at home, this is the cut for you. Meet PICANHA, …but beware of its many impostors. Inspired by Rodízio-style restaurants, picanha is a true staple in Brazilian churrascarias. While picanha is recognized for its specific cut and signature fat cap, outside Brazil you’ll often see other cuts misrepresented as picanha. Though tasty in their own right, substitutes can confuse the uninitiated. Know your steaks—and demand the real deal.
BEWARE OF MISLABELING!
While searching the web for a good recipe to share with our customers, we came across a promising webpage www.delish.com, listing the best picanha recipes accompanied by the photo below. Though the shared recipe is spot-on, the pictured cut isn’t true picanha. No cut is “bad,” but mixing them up leads to confusion—and compromises your Rodízio-style feast.

Traditionally, it’s skewered, salted simply, and grilled over an open flame until perfect, yielding rich, succulent flavor.
